Thursday thru Sunday

It’s probably too early for anyone to hear me singing.

Also, I just looked up the lyrics, because that didn’t sounds quite right. Turns out, those are NOT the lyrics, but I spent too much time making that little picture on PicMonkey, so there you have it.

It’s Monday!

I must say, since I put our Christmas decorations up, I am feeling very festive. And have lots of energy. Or maybe that’s the two cups of coffee I just drank. Or the sugar rich carmel creamer I put in it. Whatever the reason,  I can’t wait for all the fun gatherings to start and chaos and craziness of the holidays!

I hope everyone had a great weekend.  To describe mine, I have to start with THURSDAY! (go freshen your coffee, or make a bloody mary, I’m feeling detailed this morning)

Justin’s sister, my sister-in-law, Sarah, graduated on Friday with her DOCTORATE!!!

She’s a freaking DOCTOR.

P.H.D.!!!  I am so happy for her! And proud of her!

They left Thursday afternoon as she graduated from K-State which is several hours from here. 

Oh, wait, Justin and I started our day with breakfast at Hy-Vee.  Yes, you are reading that correctly. We ate breakfast at a grocery store.

This was actually my second breakfast, because, like every other day, I had already eaten eggs and oats.

So, not only did I not go to yoga or the gym, because we had too many errands to run before he left, I ate two breakfasts.

Awesome. You can see where this weekend is headed.

Spoiler alert….It ends with bacon.

Friday

I was supposed to do the normal stuff around our house and then hop in the car with my Mom and Stepdad because MY BROTHER was graduating from MU with his Bachelors.

Instead, I woke up to a little freezing rain. And went no where. NO WHERE!!!

I spent the rest of the day pouting and crocheting.

Saturday

Was cookie baking day at the Beach House.  I made Spice Cake-Mix cookies.

One box of cake mix + 2 eggs + 1/2 cup vegetable oil = the best damn cookies you ever ate! (oh, and you need to bake them at 350 for 8-10 minutes)

They were good just like that, but I felt like taking them to the next level.

Powdered sugar + water = glaze, which naturally turns any cookie into a glazed donut. Delicious.

I made six dozen of these little nuggets of happiness because we had our annual cookie exchange with the Shelley girls on Sunday. (here would be a good place to insert a picture of the six of us but I allowed someone else to take the picture and now I will probably never see it!  Hurry up Autumn!)

I also made this chicken, broccoli, rice casserole on Saturday.

Several people have asked for the recipe, but here’s the deal.  I would not make it the same way again.  I totally winged it and my sauce came out too thick and made enough for half the nation.

The basics are:

  • Brown rice
  • Chicken breasts
  • Frozen broccoli
  • Cheese sauce
  • Onion

It’s basically green rice with chicken.  I didn’t want to use condensed soup because I wanted it gluten free so I decided to make my own sauce.

Here is where I would change things.

I sautéed one whole onion (that’s not the part I would change) in a whole stick of butter (THAT’S the part I would change) for my fat and it caused me to have to make a HUGE batch of sauce BECAUSE, if you have ever made gravy then you know, I had to add enough gluten free flour to soak up all that fat, which caused me to use an entire container of chicken broth to thin it out (and I could have used more), and then I had to add way too much cheese to make it a “cheese sauce”……

It just kept growing! that’s what she said

It was good. I learned from my mistake so I will definitely be making it again and using less of EVERYTHING when making the cheese sauce.

Sunday

I got to the gym early.  I started with some squats, going light, ass to ground, really paying attention to keeping my core tight and engaging my glutes.

Back at home, I made these yummy appetizers from Pioneer Woman to take to the Cookie Exchange.

They were a hit!
