Last Meal

This could be the meal that keeps me from ever competing again.

Weekly Wrap Up

Happy Friday!

Here’s what I was up to this week:

Spent Monday being best friends with my heating pad and eating popcorn.

Slept all day Tuesday because I was up all night Monday being sick from cramps.

Wednesday, we celebrated my Mom’s birthday.

And, I took Sara to get all her shots and cried to the vet about how much she sheds.

Thursday I got a Brazilian wax. OOHHHH KELLY CLARKSON!  She tried a different wax on me. The hard wax.  You don’t have to use the paper strip with this wax and it doesn’t stick to your skin. It just wraps around the hair follicle.  I highly recommend this wax!  It only hurt a little and was done super fast!  I was in and out of there in 15 minutes!

That brings us to today!  I am taking Piper to the groomer and then heading up to my StepMom’s work to pick up some veggies from their garden.

Summing it Up

To sum up last week….it was tough.

Saying Goodbye

We got home from Colorado on Monday and Tuesday night, my Stepdad’s Dad lost his battle with cancer.

My Step-Dad was really close with his Dad and it was heart breaking to watch him, along with the entire family, go through the process of knowing he was about to pass and then the grief that came after he passed.  He was a kind man, who loved his family very much. He will be missed. 

Exercise

I ran and went to Pilates last week.  It felt really good.  I think I’ll do more of that this week.

It also feels really good to lay on my back with my legs up the wall after running.

Food

Sandwiches:  We got a hankerin’ for an italian sandwich…and kept eating them all week!

Salami, pepperoni, ham, provolone cheese, lettuce, tomato, onion…then dipped into Newman’s Own Oil & Vinegar dressing.   I know I’m supposed to be gluten-free, but this sandwich needed a soft, normal, yummy bread!

Salads: This is actually a salad and not a bowl of toppings!  Leave it to me to take a salad into the 1,000’s for calories!  Since I could only eat one sandwich, on regular bread, ever couple of days, due to the gluten, I would eat the sandwich ingredients in a salad.  There is some lettuce (ice burg and green leaf) buried under there.  I used Newman’s Own Oil & Vinegar dressing and Ken’s blue cheese.

I ate some other stuff too (obviously), but those are the meals of which I actually remembered to snap a picture.

Weather

In case you haven’t heard…it’s freaking H-O-T in Kansas City!  I must say, I don’t mind it.  I love the heat and the sunshine.  I get my running, walking the dogs and sitting outside done before 8am, so it doesn’t really bother me.

The animals, on the other hand, are bored crazy.

They go in and out 500 times a day because they want out soooo bad, but it’s so stinkin’ hot, they want right back in!

Colorado Family Reunion

We just spent four days in Fraser/Winter Park Colorado!

A couple of moose off the side of the road…no big deal. (whoa)

We arrived Thursday, and after driving the switch back to get to Fraser, we were both ready for a drink.

Justin is not a fan of heights, but had no idea the switch back was going to send him into a panic attack (for the 45 minute drive).  It was touch and go.

We eventually calmed our nerves and met up the family. The rest of the weekend went way to fast.  It was so much fun!

We all stayed in Condos within walking distance of each other. During the day, everyone did whatever they wanted and we would all meet up in the evening at the recreation center for dinner and entertainment!

The view from our condo was beautiful. First thing I did every morning, was sit outside and just soak it all in while drinking coffee (of course!).

Then I would lace up my running shoes and go for a wog (you know, a walk/jog) because I couldn’t breath up there!  That was such a weird feeling.

Justin and I also took walks in the morning. We are going to miss the Colorado weather. Cool and crisp in the morning and evening and warm during the day. Perfect.

Saturday, Justin talked me into a hike with his sister and her boyfriend.  I am outdoors-y in the way of sitting outside in a lawn chair taking in the view (with a glass of wine).  I even enjoy camping…at a designated spot for humans.  Not hiking a rocky trail.  Up a mountain.  Where bears live.

But, I did it, and I’m so glad I did.

Our endorphins were definitely pumping after that hike. It was awesome and I would do it again.

Sunday, we spent the day at Winter Park Resort. What a fun place!

They have so much to do there for kids and adults.  We played miniature golf and road the chair lift to the top of the mountain.

I still shudder just thinking about dangling off that chair.  I had never done that.  I’m glad we did it, but pretty sure I’m never doing that again. N.E.V.E.R.

Sunday evening, we had dinner at Heck’s which is located in Devil’s Thumb Ranch.  There were so many great moments during the weekend, but this place was probably the highlight.

Not only was the food great, but the view…well I can’t even come up with adjectives to describe it.

It was such a great night! 

Once back at the condo area, we all met up at Justin’s Uncle’s and celebrated their 50th Wedding Anniversary as well as two of the kid’s graduation from high school.

Everyone was leaving on Monday, so we said our goodbye’s that night.  We met up with Justin’s other Uncle and his wife for breakfast and then headed out for our trip home.

A lot of memories were shared over the past four days and more were made.  Everyone was already talking about when and where to do it all again!

Independence Day

Big plans?  We are headed to my sister, Vann’s, house for the afternoon.   We will actually be home before dark so we’ll probably be sitting outside with a hose so we can be ready to spray our house down when it catches on fire.  The people in our neighborhood shoot off so many fireworks. They started last night, actually!  It is so dry here, I hope they are being smart about it.  eep.

It has quickly become one of my favorites.  It’s light and silky.  It’s comfortable enough to wear around the house but cute enough for public too!

I started the day at Pilates.  It was leg day.

It was so good it made my hair poof!

Back at home, I leashed up the girls and took them for a long walk.  I was too hot to eat when I got home, but I knew I needed to get some food, so cold Chobani yogurt with granola and a peach!

For lunch, we headed to a mexican restaurant for tacos. It was Taco Tuesday, after all.

I ate too many chips with salsa and gauc, so I managed to eat the tacos but no beans and rice.  I was reading something one day on tips for eating healthier in restaurants and one of the tips were don’t eat the free food….chips and salsa, bread baskets! It’s a good tip. I wish I could remember it when they plop that hot, salty bowl of chips in front of me!

We wrapped up the day by watching Master Chef.  Love that show, but am really looking forward to Big Brother!

Enchilada Casserole

Someone needs to let my dogs know that it is 100 degrees outside.

Oh wait, it was only 98 yesterday.  I think they are sick of the air conditioning.  They go out and just lay in the sun. Crazy girls!

I started the day at Title Boxing.

I wanted to come home and lay on the floor for three days.  Not gonna happen in this house.  Justin was headed out to get an early start on the golf course, so I was on my own getting everyone up and ready for the day. (He gave me the morning off today for doing that!)

I grabbed a quick  meal before getting to work.  Chobani apple cinnamon with Udi’s gluten free granola.

Once everyone was gone, I melted into a chair and zoned out until my tummy let me know it was time to move again.

Meal #2: Egg whites with canadian bacon and gluten free toast with butter.

Besides letting the dogs in and out every five minutes, I didn’t do a whole lot yesterday.  I read a couple of books on my Nook and made an enchilada casserole.

It’s super easy to  make.  I make a large pan because there are five of us, so you might have to adjust the quantity of your ingredients.

  • 2 or 3 lbs of ground beef (or turkey or chicken) with taco seasoning
  • 1 large can of refried beans
  • 1 can of refried black beans
  • picante sauce
  • cheddar cheese
  • 2 cans of enchilada sauce
  • corn tortillas

Brown the the meat, drain the fat if necessary, and add your seasonings.

In a large bowl, mix the two refried beans together and add some picante sauce to it.

Pour some enchilada sauce on the bottom of the pan.

Then start layering:

  • 6 corn tortillas
  • refried beans mixture
  • meat
  • cheese
  • enchilada sauce

I make three layers.

Bake at 350 for 35 minutes or until the cheese is bubbly.

You can make it much healthier than I did by using lean meat, making your own refried beans, your own enchilada sauce and fat free cheese.  I make it quick and easy.

It’s a crowd pleaser!
