Yesterday was so great. I woke up bright and early at 4am and had so much energy!
First on the day’s agenda:
Workout #1: Title Boxing. Every class is amazingly challenging, but yesterday’s was brutal in a way that left me nauseous for about 45 minutes! I did not feel like eating a hot bowl of oats with protein when I got home, and we didn’t have the groceries for an ice cold smoothie, so I made a quick and easy treat that gave me the carbs and protein I needed for post workout.
Meal #1: Chocolate protein powder mixed with just enough water to be peanut butter consistency, then mix in 1 tablespoon of peanut butter, once that is completely combined, stir in 1/4 cup of granola. It was like a caramel-y, ooey-gooey, delicious peanut buttery treat! I’ve made it before, but it’s been awhile.
Perfect meal for my nauseous belly because it kind of takes a while to eat. Mmmmm. So good!
After getting everyone up and ready for the day, it was time for my next meal. I knew I wanted protein pancakes, but I was also looking to add something to them. I found a gluten free oatmeal Justin had bought when he thought he might start eating oatmeal every morning. Turns out, that’s not for him, so we have had this box of oatmeal sitting in the pantry for months.
I poured a pouch of it into our Vitamix and ground it into flour, added the egg whites of three eggs, cooked it up and WA-LA:
Meal #2: The best pancakes of my life!
They were moist and tasted like apple pie! They don’t need to be topped with anything because they are so good eaten plain and with my hands!
Next on the day’s agenda was buying a new TV. Why do TVs have to die at the worst possible time? (like, this month, because we just bought new furniture! oomph!) But, it is what it is, so off we went to purchase a new TV.
Then it was lunch time and grocery shopping for necessities (because our trunk was full of a TV!)
Meal #3: Chipotle: Chicken burrito bowl (brown rice, fajita veggies, black beans, chicken, tomato salsa, green salsa and lettuce) Justin wanted to show you his chips with guac)
It was beautiful weather (again!) in Kansas City yesterday, so the afternoon was spent laying on the deck in the sunshine (completely ignoring the paperwork I have to get done by tomorrow).
Then it was back inside to eat something that would give me the energy I needed for my next workout.
Meal #4: Gluten free toast with natural peanut butter, honey and a banana
That next workout being BALLET CLASS!
I am really loving my ballet class. It’s hard for me to even put into words how much I am enjoying this class. After training in Kenpo Karate for 11 years and then moving into lifting weights and now Title Boxing, my body wants to be solid and grounded. Now I’m trying to be light and graceful. My muscles are totally freaked out! I feel heavy and stiff but I love every second I am there.
There was only one other girl in my class last night and we soon realized that we recognized one another because she had also trained with Hitch Fit! What a small world. It was fun meeting her in person.
Once home, I got busy getting something to eat. I was starving!
Meal #5: Brown rice noodles, roasted broccoli, topped with chili

I wrapped up the day by watching The Voice and crocheting.
Time to lace up my running shoes and hit the street! See you tomorrow!
