Totally Boring

Yesterday was totally boring and lazy and wonderful!  I mean, totally.  I started the morning out in the screened in porch with my girls!

Katy is always looking at me like, “What about me?” “Why aren’t you petting me?” “Why is that thing on your lap and not me” If I could hear her thoughts, I’m pretty sure they would be: “ME, ME, ME. ME, ME, ME. ME. ONLY ME!”

Sarah is still trying to figure out what to do when the other two tear ass to the fence and bark wildly at a passer by. She wants in on it. Kind of.  The little ones are still a little scary to her and she’s not quite sure what to bark at or who they are chasing.  Or what it means to chase. Standing on the couch, in the screened in porch, seems like a safer place for now.

Justin and I were both craving cookies last night, but I knew there was no way I could have a whole batch of cookies in the house and not eat them all.  Justin can eat two cookies and be done FOREVER! He may not eat one more cookie out of the whole batch!  I on the other hand will not rest until every last one is gone.  Knowing this about myself, I was not going to bake cookies at 8 o’clock at night.  To feed my sweet tooth, I ate a bowl of gluten free Panda Puffs with dark chocolate almond milk!  FYI, I don’t recommend eating a bowl of cereal at 8 o’clock at night either (it made for a very restless sleep), but last night, it seemed like I only had two choices…cookies or cereal. I picked the lesser evil.

YUMTASTIC!  Squashed my sweet craving without having to eat two dozen cookies! Winning!

By the way, we are back to roasting in the midwest.  We had that nice little break of cooler temps and rain, but got reminded yesterday what season we are in as Mother Nature slapped a big fat heat blanket on us again.

Roast, Potatoes, Carrots

Okay, so, I’m sure everyone has eaten this meal before and probably even cooked it.  But, maybe everyone does it a little different, so here is how I make roast, potatoes and carrots.

Step 1: Clean potatoes (I used fingerling and red potatoes this time).

Step 2: Cut up any large potatoes so everything is about the same size and will cook evenly.  Place in bottom of crock pot.

Step 3: Dump a small bag of baby carrots on top of potatoes.

Step 4: Slice one whole onion and layer half of it on top of the carrots.

Step 5: Salt and Pepper your meat of choice and place on top of the bed of onions (I used a boneless chuck roast), then put the rest of your onion slices on and around your meat.

Step 6: Pour 8 oz of water around the side of your meat.  Put lid on crockpot and set for 10 hours.

Now settle in and enjoy the aroma that will now fill your house for the next 10 hours!

Friday and Friends

Well that was frustrating!  I typed up an entire post and then Live Writer wouldn’t let me post it or save it and before I knew what happened I deleted it! *waves fist at computer*

Oh well, that just gave me the opportunity to fill my coffee cup back up and now I’m writing this new post from our screened in porch.  It’s a beautiful morning!  Grey, overcast skies, humid, but its cooler and there is a nice breeze. I’ll take what I can get if it means I can sit outside!

Okay, so back to yesterday!

I started the day with procrastination! It was raining when I woke up, so I scratched running outside off my list immediately.  Then I got busy with my marathon blog posts and that took quite a long time. When Justin woke up, we drank coffee and talked about his night, which I hadn’t heard about yet because I was asleep when he got home!  We talked straight through my normal cardio hour. Darn. 

After getting everyone up and out of here for the day, I made some Godwin Bars.

It was now afternoon and I really needed to get some sort of sweat going, so I did what always motivates me….trying on clothes.  After about 45 minutes of trying on different outfits and deciding on one for our date night, I was ready to get on the elliptical!  Aaaahh, it really did feel so good.

Met Chris and Jen at O’Dowd’s for more beers and great conversation on the rooftop.  It was a beautiful night to be outside.  We got sprinkled on a couple of times but didn’t even care.  Everything was too perfect to let a couple of rain drops mess with our night!  It was Chris and Jen’s last night before heading back to San Francisco.  We will miss them.

Cook, Clean, Repeat

Diana posted my FINAL transformation story yesterday morning and I was practically glued to my computer the rest of the day!

I had not seen the after shots we took with David Bickley.  It’s crazy to see how much my body changed from Wednesday to Saturday.  That’s another great reason for taking so many pictures.  I wouldn’t believe it if I didn’t see it!

Any who, beside staring at myself all day, I loved reading all the wonderful comments on Facebook.  I am so motivated by all the great friends I have made throughout the past couple of years.  It’s true what they say, if you want to be the best, you need to surround yourself with the best (or something like that!) 

After doing that for way too long, I needed to get to the grocery store and the bank.  Justin was playing golf with his Dad.  I knew he would be tired.  So, I made several meals for him and our residents to eat last night and for the next couple of days.

I’ve noticed something lately.  I almost always have food prepped for myself.  There is always a bag of cooked chicken or ground turkey in the fridge, but Justin doesn’t do that (nor do I do it for him).  So, when he doesn’t feel like cooking, like after a long day of golf, he is more likely to stop and get something unhealthy or talk me into ordering Chinese or pizza.  I have never minded ordering it for him but I never ate it myself. Lately, I have found myself eating it.  Not good.

So, I decided that when I cook myself a batch of chicken or ground turkey, I am also going to cook a batch of something that Justin will eat.  Yesterday is was Saucy Little Meatloaves!

Oh wait!  I almost forgot!  I took advantage of the 40% off sale at the The Loft and purchased some super cute new outfits!  Two of the dresses were 50% off the sale price! Score! I’ll post them as I wear them.

I was wearing one of the dresses when Justin got home from golf and the first thing he said was “that’s a pretty dress”!  And I said, blushing, “Thanks, it’s new!”  blah, blah, blah, kiss, kiss, kiss.  The end.

That’s one of the reasons I Love Him!  He notices EVERYTHING!

Pasta Bake

You will need:

  • Penne noodles
  • lean ground beef
  • salt and pepper
  • garlic powder
  • italian seasoning
  • italian sausage
  • pepperoni
  • dice tomato
  • tomato sauce
  • tomato paste
  • parmesan cheese

Boil one package of noodles per package directions. Pour into large baking dish or, depending on how big of a package of noodles you cooked, two 9x13 baking dishes.

Brown ground beef with salt, pepper, garlic powder and italian seasonings. Pour over noodles.

Brown italian sausage and pour over ground beef.

Cut 6-10 pepperoni slices into fours and sprinkle over italian sausage.

Sprinkle the diced tomato over the pepperoni slices.

Cook tomato sauce, tomato paste and one (or two) cans (using tomato paste can) of water. Add salt, pepper, garlic powder and italian seasonings.  Let cook together until it comes up to a simmer.  Pour over italian sausage.

Lightly sprinkle with parmesan cheese.

Now mix all ingredients together in baking dish.  Cook in a 350 degree oven for 15 or 20 minutes.  It’s basically all cooked, this just gives it time for all the flavors to cook down together.

Mongolian Beef

I adapted this recipe from Iowa Girl Eats:

You will need:

  • 1-2lb Flat Iron Steak
  • 1/4 cup corn starch
  • 1/2 of a bunch of asparagus, cut into bite size pieces
  • 1 tablespoon (or so) of minced garlic
  • 1/2 cup “less sodium” soy sauce
  • 1/2 cup water
  • 1/3 of a cup brown sugar
  • 3 green onions cut into large pieces

Cut your steak into thin, bite size strips. Toss in corn starch. Set aside.

Heat some olive oil on medium high in a large skillet.  Add the asparagus and let cook for a couple of minutes while you prepare the sauce.

Prepare the sauce by mixing the soy sauce, water and brown sugar.  Add the garlic to the pan, toss around a couple of times (not for too long, you don’t want the garlic to burn!).  Add the sauce.  Turn the heat down to medium and let simmer and thicken a little.  Don’t worry if it is still thin, the cornstarch on the meat will thicken it.

Pour the sauce and asparagus in a bowl and set aside.  Turn up the heat, add more oil and toss the meat in.  Brown the meat but don’t cook all the way.  It will continue to cook when you pour the sauce back into the pan.  Once all the meat is brown but still a little pink on the inside, pour your sauce back in and lower heat to medium low.

Allow to cook until it reaches desired thickness.

Add green onions.
