I adapted this recipe from Iowa Girl Eats:
You will need:
- 1-2lb Flat Iron Steak
- 1/4 cup corn starch
- 1/2 of a bunch of asparagus, cut into bite size pieces
- 1 tablespoon (or so) of minced garlic
- 1/2 cup “less sodium” soy sauce
- 1/2 cup water
- 1/3 of a cup brown sugar
- 3 green onions cut into large pieces
Cut your steak into thin, bite size strips. Toss in corn starch. Set aside.
Heat some olive oil on medium high in a large skillet. Add the asparagus and let cook for a couple of minutes while you prepare the sauce.
Prepare the sauce by mixing the soy sauce, water and brown sugar. Add the garlic to the pan, toss around a couple of times (not for too long, you don’t want the garlic to burn!). Add the sauce. Turn the heat down to medium and let simmer and thicken a little. Don’t worry if it is still thin, the cornstarch on the meat will thicken it.
Pour the sauce and asparagus in a bowl and set aside. Turn up the heat, add more oil and toss the meat in. Brown the meat but don’t cook all the way. It will continue to cook when you pour the sauce back into the pan. Once all the meat is brown but still a little pink on the inside, pour your sauce back in and lower heat to medium low.
Allow to cook until it reaches desired thickness.
Add green onions.
Serve over rice.
